Many of you know that since 2011, I've been teaching cooking classes in the community kitchen at Cancer Support Community, Atlanta (CSC). CSC is an amazing nonprofit organization that provides a variety of supportive services for cancer patients and their families free of charge! In addition to cooking classes, they provide nutrition education, a variety of stress reduction and exercise classes, like yoga and Tai Chi, and fun social activities. I absolutely love being a part of this wonderful organization!
Thanks to the generous food donation from The Fresh Market, we've been able to add a new monthy cooking class to the roster! This new hands-on class has quickly become the talk of CSC. Check out what one of our participants wrote to Logan Holcomb, marketing manager at The Fresh Market, about her experience at the first class, which was held on Saturday, May 3rd, 2014, "Yesterday, I attended the cooking demonstration at CSC, sponsored by Fresh Market. It was SO much fun! Ashley is great, and everyone enjoys her programs. We were all marveling about the fresh produce, thanks to Fresh Market, and could not get over the size of your tomatoes!! It was a hands-on event, so we all participated in the preparation, and then sat down and enjoyed the fruits of our labor! It was such a fun time and a delicious meal. Besides being a culinary experience, it also gave some of our participants who didn't know each other a chance to mix and mingle. We definitely felt a connection when we left....food and otherwise!"
The theme for the first cooking class sponsored by The Fresh Market was Southwestern Fiesta. The participants divided into four groups to prepare Southwestern Shredded Chicken Tacos, Vegetarian Refried Bean Tacos, Pico de Gallo and Mango Salsa. They did all of the chopping, mixing, cooking and measuring. They put together a delicious spread of food using very fresh, colorful and healthy ingredients. In addition to the new hands-on class sponsored by The Fresh Market, I will continue to teach my regular cooking demonstrations at CSC, which occur twice per month. These classes focus on easy cooking techniques using nutritious cancer-fighting foods. The goal is for the participants to gain cooking skills and knowledge of health supportive foods that they can easily replicate at home. Topics over the years have included: Anti-Inflammatory Foods, Antioxidant Rich Desserts, Ancient Grains, Simple Gourmet Vegetable Side Dishes, Indian Flavors Made Easy, and Naturally Sweet Summer Desserts.
