Walking up and down the rows of blueberry bushes was not only relaxing, but also rewarding. The four of us took our own bucket and after almost 2 hours, we'd picked 17 pounds of perfectly ripe blueberries!
You might be wondering, what will we do with all of these blueberries? Well, honestly, I'm still wondering the same thing....
The good news is that blueberries freeze well and recent research shows that fresh blueberries can be frozen without damaging their delicate anthocyanin antioxidants. These antioxidants give blueberries their blue color and research suggests that they provide protective heath benefits against – cancer, aging and neurological diseases, inflammation, diabetes, and bacterial infections. So, back to, what will we do with this blueberry stash, other than eating them right out of the bucket... well, I've already made these awesome Oat Bran Blueberry Muffins and here are a few more of my initial ideas:
Fresh topping for cereal, oatmeal, granola
Blueberry muffins or pancakes (whole grain, of course!)
Blueberry Jam (for toast)
For lunch or dinner:
Fresh addition to chicken salad
Fresh addition to arugula salad or any other type of green leafy salad
Fresh addition to couscous or quinoa salad
Savory blueberry sauce for grilled chicken
Panna Cotta with Blueberry compote
Blueberries with fresh whipped cream
Blueberry iced tea
